I promise to try to keep things a little healthier on this blog from here on out…but there are exceptions to every rule! Today is a special occasion…Alex’s birthday! In celebration, I’m sharing how I pull together a simple ice cream cake at home.
- Ice cream sandwiches (I used the minis this time since there are only two of us!)
- Oreos (I used a bag of minis)
- Magic Shell chocolate sauce
- Caramel sauce
- Cool Whip
Depending on how big you are making your ice cream cake, grab a cake pan or a loaf pan. I used a loaf pan this time because I don’t need all of the leftovers hanging around the house! Put a layer of ice cream sandwiches along the bottom. The loaf pan I used fit five mini ice cream sandwiches. Then, pour a layer of caramel sauce over the ice cream sandwiches.
Now, comes the fun part! I love the little chocolate crunchies in the middle of ice cream cakes from the store. Did you know you can make them at home?! Pour about 1.5 cups of mini Oreos into a plastic baggie and smash them up. Once you pour them into a bowl, cover them with Magic Shell chocolate sauce and mix. The sauce turns Oreos into those yummy little crunchies! Add the crunchies to your cake.
Add another layer of caramel sauce over the crunchies, then top with another layer of five mini ice cream sandwiches. Spread some Cool Whip across the top and sprinkle some crushed up Oreos on the top for good measure!
Prepare the ice cream cake a few hours in advance so it has time to firm up in the freezer. Slice and enjoy!
