As a new year begins, I know many of you will be looking to inject healthy habits into your daily routine. I’m in the same boat, so I’m sharing a couple of my favorite lightened-up lunch ideas to help you shed some fat while still enjoying yummy food.

blog_gyro lettuce wrap main photo.jpgI shared a recipe for greek chicken pitas last week, so this first lunch idea is a twist on that recipe. To cut down on bread intake, these gyro lettuce “wraps” use the leafy green instead of carb-filled bread!

What you’ll need:

  • Ground turkey (I used Shady Brook Farms 85% lean turkey)
  • Salt and pepper (just a pinch!)
  • Paprika
  • Onion powder
  • Garlic powder
  • Oregano
  • Head of lettuce
  • Chopped onions
  • Tomatoes
  • Feta cheese
  • Tzatziki sauce (I used 2 tbsp. of the Wegmans pre-made version)

Start by browning your ground turkey in a skillet…I only made one serving (4 oz.), but you could certainly cook up the entire package which yields 5 servings. I did not use oil for this recipe! Add your spices to taste. Once your turkey is cooked through, it’s time to assemble your wrap! My lettuce was so large, I only used one large leaf to make a wrap. Add your cooked turkey and then top with chopped onions, tomatoes and tzatziki sauce.

blog_pizza wrap mainIf you’re like me, you LOVE pizza…but can’t afford to toss back a cheesy, saucy, pepperoni-covered pan pizza like you could when you were younger. 🙂 I am always trying to find a skinnier, more health-conscious way to enjoy these craveable flavors. I came up with these skinny pizza wraps to satisfy my desire for pizza…and save on all of the unhealthy side effects of giving in to that desire!

What you’ll need:

  • 1 Flatout Light Original wrap (only 90 calories per wrap!)
  • 1 tbsp. pizza sauce of your choosing (I used an organic variety from my local store)
  • 10 slices of turkey pepperoni (I used Hormel)
  • Reduced fat mozzarella cheese
  • Italian seasoning

Put a dollop of pizza sauce on your wrap to start. Then, use about 10 slices of turkey pepperoni and sprinkle the mozzarella cheese on the top. Cap it off with a shake of italian seasoning. You can either put it into the toaster oven flat, or roll it up to make a pizza wrap. Toast for a couple of minutes, then sink your teeth into that pizza taste you love…without the guilt!

blog_cucumber and tomato salad main photo.jpgThis last idea is the easiest of the bunch…it just requires a little chopping and stirring! The flavors in this cucumber and tomato salad mix together to well, you’ll crave more after you try it.

What you’ll need:

  • Cucumber
  • Grape tomatoes
  • Feta cheese
  • Chopped red onion (you can use yellow if you prefer)
  • Lite Greek dressing (I use Gazebo Room)

Halve your grape tomatoes, chop up the cucumber, add feta and onion to your liking…and top with 2 tbsp. of dressing. So good and so easy!
