I love a good stuffed pepper! I usually make my traditional recipe (which I will share someday!), but tonight, I tried something a little different to change things up. Alex and I both love Philly cheesesteaks, but not the calories that come along with them. Try this lighter version with a similar flavor!

What you’ll need:

  • 2 peppers (my store only had tiny green peppers, so I used red)
  • 2 tbsp. olive oil
  • 1/2 lb. shaved London broil
  • 1 cup chopped onions
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. seasoned salt
  • 4 slices provolone cheese

Preheat your oven to 350 degrees. Start by slicing your peppers in half. Remove the seeds and rinse. Place the pepper halves in a baking dish.

Heat the olive oil in a pan over medium-high heat. Add your onions and cook until soft.

Add the London broil to the pan and cook until brown. Stir in the spices.

Spoon the meat mixture into the pepper halves and bake for 25 minutes.

Add the provolone cheese and place under the broiler for an additional 5 minutes until cheese is bubbly.

I served these peppers with a side salad. Enjoy!
