Being Italian, I’m conditioned to love pasta…all kinds of pasta! One of my favorite ways to eat pasta is lasagna, so I love the idea of trying new recipes. While traditional lasagna includes meat, these lasagna roll-ups are perfect with just a cheesy filling. I’ve seen numerous recipes with spinach included, but I prefer my own cheesy, garlic-y mixture, sans the green stuff! These are fairly easy to make and come together quickly after a long day at work.
What you’ll need:
- 1/2 lb. of lasagna noodles, cooked
- 15 oz. part-skim ricotta
- 1 egg
- 2 tsp. minced garlic
- 2 tbsp. grated parmesan
- 1 tsp. garlic powder
- 1/2 tsp. pepper
- 1 cup mozzarella (for mixture)
- 1 cup mozzarella (for topping)
- 24 oz. jar of pasta sauce (I like Newman’s Own Sockarooni!)
- basil (for garnish)
Start by preheating your oven to 350 degrees. Cook your lasagna noodles according to the package and then lay them out on a baking sheet.
Mix the ricotta, egg, minced garlic, grated parmesan, garlic powder, pepper and 1 cup of mozzarella in a mixing bowl.
Spread the filling mixture on your lasagna noodles. Add a little pasta sauce over the filling mixture.
Roll them up and place them in a baking dish that has a bit of pasta sauce on the bottom. Spoon pasta sauce over the roll-ups and top with reserved mozzarella cheese.
Cover with foil and bake for 30 minutes. Garnish with basil before serving. I served these with a side salad for a complete and filling meal!
