If you’ve been reading along, you know I have a sweet tooth. It hits me often, especially after dinner, when I just need a little somethin’, somethin’! I will start by saying I have never been a huge fan of nuts, save for the cinnamon-roasted pecans that smell so delicious at the mall. BUT…I have opened my mind to almonds and used them in a few granola recipes. This time, I decided to try something a bit different!
I love anything covered in chocolate and it’s a double whammy if sea salt is involved. I had about a cup and a half of plain almonds in the cupboard and some unused Ghirardelli dark chocolate melting wafers…and a light bulb went off! This is a super easy recipe (only 3 ingredients!) and you’ll have a delicious treat to satiate your sweet tooth.
What you’ll need:
- 1 1/2 cups of plain almonds
- 1 cup of Ghirardelli dark chocolate melting wafers
- Course sea salt
Start by melting your chocolate wafers according to the package. I melted them for 1 minute…stirred…and then melted again for another minute.
Stir your almonds into the chocolate. Make sure all of the almonds are covered!
After your almonds are covered, spoon the chocolate-covered almonds into clusters on a foil-covered baking sheet. I used a tablespoon for this part. Top your clusters with a little sprinkle of course sea salt while the chocolate is still nice and melty.
The next part is the hardest…waiting for the chocolate to harden! I put mine in the fridge to speed up the process a bit.
