If you’ve ever visited Isaac’s Famous Grilled Sandwiches restaurant chain here in Central PA, you may have seen their pepper jack tomato soup on the menu. It is SO delicious. Alex — who often turns his nose up at all things tomato — tried it and absolutely loved it. I vowed to try to recreate it at home! With the weather taking a turn for the cooler lately, warm up with this soup before the spring temperatures return.
What you’ll need:
- 2 cans of heart healthy condensed tomato soup
- 14 oz. can of petite diced tomatoes
- 8 oz. shredded pepper jack cheese
- 1/4 tsp. paprika
- 1/4 tsp. basil
- 1/4 tsp. onion powder
- 1/4 cup heavy cream
- 1-2 sandwich rolls (for croutons)
- 2 tbsp. light butter
- Garlic powder
This creamy tomato soup hits the spot anytime, with a rich tomato flavor and a slight bite from the cheese. To top it all off (literally!), Isaac’s puts buttery, garlicky croutons on top which gives the soup a satisfying crunch. So let’s start there. To recreate the croutons at home, start by cutting up one or two sandwich rolls into one-inch cubes (I only used one). Then, melt 2 tbsp. of light butter in a microwave safe bowl and toss the bread cubes in the butter. Spread on a baking sheet and sprinkle with a bit of garlic powder. Bake them at 350 degrees for about 10 minutes.
Let them cool and harden for about 15 minutes while you make your soup. This soup is so easy to make! Combine all of the soup ingredients except the heavy cream in a pot over medium heat. Stir often to prevent burning on the bottom for about 10 minutes.
Once all of your cheese is melted, stir in the heavy cream and mix well to combine. And THAT’S IT! I told you it was easy. 🙂
Top your soup with the croutons and serve it with a grilled cheese for a really tasty comfort food-filled meal. Enjoy!
