I’m back again with another round-up of easy lunch ideas! I often struggle with lunch…I get stuck on one thing for awhile until I can’t stand it and have to have something new. This week, I made three delicious options that are super quick to make and will keep you feeling full all day!

avocado toast_final.pngI’m apparently late to the avocado toast party. Have you tried it? It is DELICIOUS and there are so many variations. It makes me feel full all afternoon and is just plain tasty.

What you’ll need:

  • Bread, toasted (I like to use the 647 brand or “lite” variety)
  • Avocado
  • Sea salt
  • Crushed red pepper
  • Garlic powder

Based on what you need, you probably have a pretty good idea how to assemble this. Start by mashing your avocado in a bowl. Toast your bread and then spread the mashed avocado on top. Sprinkle any seasonings you’d like on top…my favorite combo is sea salt, crushed red pepper and garlic powder.

chicken jalapeno wrap_final.pngI shared a pizza wrap recipe before, but I tried a different variation with chicken this time around. Wraps are so versatile, so you can really fill it with whatever you like!

What you’ll need:

  • 1 Flatout Light Original wrap (only 90 calories per wrap!)
  • Chicken
  • Shredded cheddar cheese
  • Sliced jalapenos
  • Bolthouse Farms Greek Yogurt Ranch (for dipping!)

Again, very easy to assemble…as promised! Simply place all of the ingredients in the wrap, roll it up and toast it until crispy. Β The melty cheese and the spice from the jalapenos will really hit the spot if you love mexican flavors! I dipped mine in some greek yogurt ranch.

parmesan pasta salad_finalSometimes, you need something a little hearty for lunch. Enter: parmesan pasta salad. The flavors in this pasta salad are so good together.

What you’ll need:

  • 1 serving organic whole wheat pasta
  • Grape tomatoes
  • Baby spinach
  • Ken’s Light Options Parmesan & Peppercorn dressing
  • Shredded parmesan

You can choose to make this one serving at a time or make enough for the week! Boil your pasta according to the package and drain. Toss it with fresh baby spinach leaves and grape tomatoes. Top with enough dressing to coat and some shredded parmesan if you wish. Pop it in the fridge for a bit to cool and then enjoy! For an added dose of protein, toss in some chicken.
