As you know, I am all about easy dinner casseroles after busy work days. This quick recipe will have you chowing down in no time with huge cheeseburger flavor. Ditch the buns and make this easy cheeseburger pie for dinner!
What you’ll need:
- 1 lb. ground beef (I opted for 95% lean)
- 1 tsp. onion powder
- 1/2 tsp. salt (I use Morton’s lower sodium)
- 1/2 tsp. pepper
- 2 cups of shredded cheddar, divided
- 3/4 cup mayonnaise (My pick is Smart Balance Light Mayo)
- 3 eggs
- 1/3 cup heavy cream
Preheat your oven to 350 degrees. Add your ground beef to a skillet and brown over medium heat. Drain once done.
While still in the skillet, add in the spices and stir in 1 cup of the shredded cheddar.
Transfer your meat mixture to a 9-inch round baking dish sprayed with cooking spray. If you don’t have a round one, a square one will do!
Combine the mayo, heavy cream and eggs in a mixing bowl. Stir until smooth. That cute egg whisk’s name is Lil’ Whiskie. 🙂
Pour your egg mixture evenly over the beef.
Finally, top with the reserved cup of shredded cheddar. Pop it in the oven for 25-30 minutes until the cheese is browned and bubbly.
You can top with scallions if you wish. This dish is so flavorful, you really don’t need any burger toppings. If you’re making this meal for more than two people, I would recommend doubling the recipe so you have enough to go around…people will want seconds!
