This is one of my go-to recipes…mostly because when I ask Alex what he wants for dinner, this is always one of his requests! You really can’t go wrong with bacon…especially when you wrap it around chicken and baste it with honey mustard. 🙂
What you’ll need:
- Chicken tenderloins
- Sliced bacon (I always opt for the lower sodium version)
- 1/2 cup honey
- 1 cup dijon mustard
Preheat your oven to 350 degrees. Line a 9×13 baking dish with foil – DON’T SKIP THIS STEP. This recipe generates a lot of grease and clean up is so much easier with the foil. Spray the foil with cooking spray.
Next, get your chicken ready. I like to trim all of the fat from the tenderloins before I wrap them. Then, just wrap each tender with a strip of bacon…easy-peasy!
Now, you’ll need to mix up your honey mustard. I like to keep it simple…1 cup of dijon mustard plus a half a cup of honey. Stir until combined.
Baste your bacon-wrapped tenders with the honey mustard. I work on one side at a time. Once you baste the top, bake for 45 minutes.
Flip and baste the other side and bake for another 30-45 minutes. If you want to speed up the crispiness of the bacon, you can broil for a bit…but I just like to let it bake until the edges are browned.
As I’m writing this and adding these pictures, I realize they don’t look as juicy and appetizing as they do in person…but trust me, THEY ARE GOOD! I like to serve them with a sweet potato and some extra honey mustard on the side for dipping!
