Summer always makes me crave delicious pulled pork. It’s the perfect thing to make for backyard BBQs, but it’s also nice to have some leftovers in the fridge to reheat on those busy summer nights. This recipe uses the crockpot to cook the savory pork, so you can turn it on and forget it!

What you’ll need:

  • Boneless pork roast
  • 1/2 tsp. paprika
  • 1/2 tbsp. garlic powder
  • 1/2 tbsp. onion powder
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 cup brown sugar

Start by mixing your spice rub together…simply combine all of the spices in a bowl and mix until combined. The combination of sweet and smoky flavors is perfect for pork.

I chose a boneless pork roast that was 1.61 pounds. That’s enough for about six sandwiches, so if you are cooking for a group, you’ll want to go bigger and adjust your spice rub measurements accordingly.

Next, massage the spice rub mix into the meat. Just pile it on and rub it in on both sides!

After you’ve coated the roast, place it in the crockpot on low for about 7 1/2-8 hours. That’s it! No additional liquids needed. As the roast cooks, it will produce lots of liquid that will be reabsorbed once you shred the meat.

After the pork is cooked, pull it apart using two forks…it will shred so easily! Stir in the juices and you are ready to serve! You can serve as-is or top with the BBQ sauce of your choosing.
