I’m one of those people who fills the house with pumpkins right after Labor Day…orrrr, maybe even a few days before! Eek. I just LOVE autumn. I love the warmth and the colors, and I love the flavors of fall. I had a few leftover bananas and even though I love banana bread, I wanted a healthier, less-sugary option. Enter: banana bread cookies!
What you’ll need:
- 2 ripe bananas
- 1 cup quick cook oats
- 1/2 tsp. pumpkin pie spice
- 1 1/2 tbsp. raisins
- 2 packets of stevia
This has to be the easiest cookie recipe ever! Preheat your oven to 350 degrees. In a medium mixing bowl, mash up both of the bananas until smooth. Stir in the other ingredients, just until they are combined. You can leave the stevia out, but I found that I liked the boost of sweetness.
Drop them by the spoonful onto a greased baking sheet and bake them for 15 minutes.
Enjoy the healthier taste of banana bread in cookie form!
