Do you love biting into a juicy cheeseburger? I DO! But…I’m also trying to get ready for a wedding, SO…what’s a girl to do? Find a lighter version that still satisfies the craving…that’s what. Try this easy cheeseburger meatloaf recipe if you have a hankering for a burger without all the regret that comes after the fast food drive-thru!

What you’ll need:

  • Meatloaf
    • 1 lb. ground meat (I used the meatloaf mix)
    • 1 cup chopped red onions
    • 1 tbsp. dill pickle relish
    • 1/2 cup panko breadcrumbs
    • 1 large egg
    • 1/4 tsp. celery salt
    • 1/2 tsp. onion powder
    • 1/2 tsp. garlic powder
    • Mild cheddar cheese slices
  • Special sauce
    • 1/4 cup mayo (I opt for the Smart Balance version)
    • 1 tsp. mustard
    • 1/4 tsp. white wine vinegar
    • 1/4 tsp. onion powder
    • 1/4 tsp. garlic powder
    • 1/4 tsp. paprika
    • 1 1/2 tbsp. dill pickle relish

Preheat your oven to 350 degrees. Start by mixing all of the meatloaf ingredients together in large mixing bowl except for the cheddar cheese slices.

Here’s where it gets good…grab a slice of cheddar cheese and break it into pieces.

Take a quarter of your meatloaf mixture and form the bottom half of the meatloaf. Top with half a slice of cheese.

Place another quarter of the mixture on top and pack it tightly around the cheese. Repeat with the remaining half of the meatloaf mixture.

Bake your meatloaf at 350 degrees for 45 minutes. Take out your pan and top the meatloaf with the cheddar cheese. Bake for another 7 minutes or so until the cheese is all melty!

Now, if you truly want this to taste like a cheeseburger, you shouldΒ to serve it with a “special” sauce! Mix all of the ingredients together in a bowl.
